Missing Canada

My knowledge on food is very limited when I entered culinary school - and most of the food items and culinary creations are only seen on TV through Discovery Travel and Living. North America's food choices are way too vast but not as vast as Asian Cuisine - though I learned a lot from my trip to Canada 8 months ago. This was also my first time to see king crab legs as common hotel staple, cooked in so many ways. Even Indians whom I got the chance to work with in the kitchen, makes several Indian versions of it.
