Last Remaining Lab Days – FISH and SHELLFISH

We prepared/processed fish to:

Drawn
- innards removed (except for gills)
Dressed
– everything removed (except for tail and innards)
Fillet – this is the first time I’ve done filleting fish. I’ve seen instructional videos of chefs doing this and it looks easy at first. It takes a delicate steady hand to do this.

I did it better on the second day and much faster than the first day.
As much as I want to eat fish, I hate preparing it.
